Azn-Freezer Pickles

img_7944Cuke season is ON: my fave veg.
Wait not, friends, here’s the recipe:

Azn-Freezer Pickles:

Yield: 1 jar
Cooking Time: 5 mins
Freezing time: 3-4 hrs

Pickling liquid:
1 cup white vinegar
1/2 cup Apple cider vinegar
1 tsp sriracha
1 tbsp sesame oil
1/4 cup tamari/liquid aminos
1 tbsp fish sauce
2 tbsp mirin
Black pepper

4 garden cukes, quartered
1/2 red onion, thinly sliced
2 garlic cloves, smashed


Bring pickling liquid to a boil.
Put all veg in a big mason jar.
Pour liquid over veg.
Let cool on counter, unlidded.
After 30 mins-ish, put in freezer w lid resting on top.
Freeze 3-4 hrs.
When ready to eat, defrost in fridge or on counter top.

I topped my salad and omelette with them for lunch:
